Fresh Garden Salsa is the BEST! It takes just a second to whip this up in a food processor so you have some on hand ALL THE TIME!
Fresh Garden Salsa
- Fresh summer garden tomatoes
- Yellow Onions
- Green Peppers
- salt and pepper to taste
Fine dice all ingredients, add to a bowl, adjust seasonings. Add more cilantro and jalepenos if necessary, allow to sit for 5 minutes and enjoy!
There are endless variations and differing quantities. I try to get my tomato and onion mixture about equal, the larger portion going to the tomatoes.
This will keep in the fridge for about a week. If you make too much, you can portion out into ziplock freezer bags and freeze flat. Thaw about 30-40 minutes.
Updated: 7-14-2014 – I have been quartering and seeding my tomatoes first, I have been getting a less watery salsa.
