We really enjoy spicy chorizo…for breakfast.
There isn’t much to this recipe, but if you need it…
Chorizo Breakfast Chalupas
- Chalupa shells
- Refried beans
- Pork Chorizo bulk or if in casing, remove and cook
- Avocado slices
- cilantro for garnish.
Cook pork sausage until done. Scramble eggs (1.5 per person)*
Spread refried beans on chalupa shell, top with chorizo, followed by scrambled eggs, and top with thin slices of avocado. Garnish with cilantro to taste.
Recipe Notes* 1.5 eggs in our household is 2 eggs, with one yolk removed. My cholesterol is 176, so it works
