Roasted Cauliflower and Garlic Spaghetti
- 1/2 head cauliflower
- 2 cloves garlic
- 2 tbsp butter
- 1 tbsp olive oil
- In a large sauté pan, mix 1 tbsp butter and 1 tbsp olive oil and heat over low-medium heat. Add cauliflower, stir to coat and allow to sauté for 20 minutes, stirring often until cauliflower is tender and starting to brown.
- Meanwhile, prepare spaghetti, if it finishes before you are ready, drain and hold warm.
- When cauliflower is tender and brown, add garlic, sautéing for 1-3 minutes, add cooked spaghetti and toss to mix thoroughly. Viola.. it’s awesome!
